Palliser Estate is a Martinborough winery known for Pinot Noir and Chardonnay, still and sparkling. Guided by kaitiakitanga, the Māori concept of guardianship of earth, water and sky, it was one of the first New Zealand wineries to adopt sustainable vineyard and winemaking practices in the early 1990s.
Organic conversion began in 2017 with the Hua Nui vineyard, followed by the Winery, Om Santi and Pencarrow vineyards. Three of its six vineyards are BioGro certified organic, and Palliser is the largest organic grower in the Wairarapa.
The team describes itself as more like a family than a business. The Martinborough cellar door offers tastings and seasonal plates.
