Immerse is a family-owned and operated winery and retreat on 49 acres of vineyards, rose gardens and countryside in the Yarra Valley. The Myles family bought the property in 2002 and opened at Easter 2003 as a boutique bed and breakfast, which grew into a 20-room retreat with a restaurant, ornamental lake and three ceremony spaces.
On Black Saturday, 7 February 2009, bushfires tore through Immerse, destroying much of the property. Supported by family, friends and wedding couples, the family spent four years rebuilding, adding the Vineyard and Garden Chapels.
Katie now leads the team as general manager, with Lachie closely involved. The reserve range, Oscars, is named after the family's late golden retriever, and the cellar door, restaurant and gardens welcome guests for lunches and weddings.
