Greystone is a winery in the Omihi Hills of Waipara, North Canterbury, New Zealand. In 2000 the Thomas family saw promise in an old sheep farm there, and in 2004 they planted thirteen blocks of vines across the Omihi slopes.
Greystone is 100% certified organic and practises regenerative viticulture, with biodiversity a core principle, aiming to lead the way in organic, regenerative winemaking. It believes fine wines are temporal, each vintage a snapshot of a place in time.
Its best-known wines include the Vineyard Ferment Pinot Noir and flagship Chardonnays, and winemaker Georgia Mehlhopt was named North Canterbury Young Winemaker of 2024.
